This is my collection of Mexican Recipes that would be perfect for a Cinco de Mayo party or potluck. There is something for everyone, so take a look at the list and pick your favorites. Let’s Fiesta!

Molcajete Guacamole

Molcajete Guacamole is guacamole made in a mortar and pestle. Grinding the ingredients releases more flavor and gives the guacamole a chunky texture. It’s perfect for dipping with chips or on your favorite Tacos.

Mexican Street Corn

Mexican Street Corn or Elotes, is a popular street vendor snack in Mexico. Serve it on the cob or shave the corn to serve in a cup for Esquites. Or try my Elote pasta salad, which is great to make ahead and makes a large serving.

Ground Beef Taquitos with cheese are crispy rolled tacos that can be made baked or fried and served with your favorite toppings.

Chicken Tinga Tostadas

Easy Salsa Verde

This Easy Salsa Verde is made in just 15 minutes with fresh tomatillos and no roasting required. Perfect with Chips, on Tacos, or to make Chilaquiles.

Frijoles Puercos

Frijoles Puercos or ‘Pork Beans’ are a savory and flavorful way to prepare refried beans. Pinto beans are cooked with Mexican chorizo, chipotle peppers, pickled jalapenos, and melted Oaxaca cheese. Serve them as a an appetizer with chips or as a side dish.

Tres Leches Cake

Pastel de Tres Leches is a white cake soaked in three types of milk and finished with a layer of fresh whipped cream. I am simplifying this indulgent dessert by using a box cake mix and substituting some ingredients to mimic a homemade taste.

Flan

This Mexican Flan combines 5 simple ingredients into a creamy, caramelized custard. You can prepare the flan a day before, refrigerate it overnight, and serve it the next day. This flan is such a crowd-pleaser!

Strawberry Paletas

Paletas de fresas con crema are popsicles made with fresh strawberries and cream. This recipe is extra creamy and full of strawberries for a refreshing treat.
