    Paletas de Fresas con Crema

    Paletas de fresas con crema are popsicles made with fresh strawberries and cream. This recipe is extra creamy and full of strawberries for a refreshing treat.

    These strawberry and cream popsicles are made with simple ingredients for a creamy treat you can enjoy all Summer long. I also enjoy having chilled Arroz con Leche as a treat too.

    What is a Paleta?

    A Paleta is a popsicle and they can either be water-based or cream-based like this recipe. Fresas con crema is a popular Mexican dessert of fresh strawberries and cream. So Paletas de Fresas Con Crema is this dessert in a popsicle form 🙂

    In Mexico, you'll find shops called Paletería, selling a variety of paletas in different flavors. They also will let you customize them by dipping the paleta in chocolate or nuts. Sometimes you can find frozen dipped bananas too.

    Ingredients

    This is what you'll need:

    • Fresh Strawberries
    • Heavy Cream
    • Mexican Crema
    • Corn Starch
    • Sugar

    I prefer to do a soak of water and a splash of vinegar to rinse my strawberries and remove excess dirt. Then rinse the strawberries with clean water.

    Mexican Crema can be found at most grocery stores. I used the refrigerated kind instead of the shelf stable one.

    Corn Starch is added as a stabilizer to prevent the paleta from getting too icy. Just make sure it is blended well in the mixture to avoid any clumps of corn starch.

    How to Make Paletas

    I'm using this silicon popsicle mold from Amazon. It also came with popsicle sticks and sealing baggies to put the paletas in once they are frozen.

    Add heavy cream, Mexican crema, sugar, and corn starch to a blender. Blend just until incorporated. Too much blending and you'll get whipped cream 🙂

    Remove the stems from the rinsed strawberries and add them in whole to the blender. If you prefer to have some chunks of strawberry, then reserve some to add to the mixture after blending.

    Carefully pour the blended mixture into the mold. Leave a little room, since the mixture will expand as it freezes.

    Give the mold a gentle tap to release any air bubbles. The number of paletas you get will depend on the size of the mold you are using.

    Rinse the popsicle sticks and place them evenly into the lid of the mold. Don't push the stick all the way in, otherwise, it will be more difficult to remove the paleta.

    Place in the freezer for at least 4 hours or overnight. Don't let the paletas sit in the freezer for more than a day. This makes it harder to remove.

    How to Remove and Store

    Remove the frozen paletas from the freezer and allow them to sit on the counter for 5-10 minutes.

    This popsicle mold came with self-sealing baggies to place the paletas in and store back in the freezer.

    Carefully pull out the paletas from the mold, and enjoy them immediately or place them in bags for the freezer.

    These Paletas de fresas con crema will last about a month sealed in the freezer.

    Ingredients
      

    • 1 pound Fresh Strawberries
    • ½ cup Heavy Cream
    • ½ cup Mexican Crema (refrigerated)
    • ⅓ cup Sugar or ½ cup for a sweeter paleta
    • 1 tablespoon Corn Starch

    Instructions
     

    • Rinse the strawberries well to remove any excess dirt. Then allow them to drain and remove the stems.
    • Add heavy cream, Mexican crema, sugar, and corn starch to a blender. Blend just until incorporated. Too much blending and you'll get whipped cream.
    • Add the strawberries to the blender, and blend until incorporated.
    • Pour the blended mixture into the mold, leaving a little room at the top. The mixture will expand a little when frozen. Give the mold a gentle tap to release any air bubbles.
    • Rinse the popsicle sticks and place them evenly into the lid of the mold. Don't push the stick all the way in, otherwise, it will be more difficult to remove the paleta.
    • Place in the freezer for at least 4 hours or overnight. Don't let the paletas sit in the freezer for more than a day. This makes it harder to remove.
