Mexican Molletes
Mexican Molletes are toasted bread, typically a bolillo roll, layered with refried beans, melted cheese, and Salsa Mexicana. It’s a Quick, Simple, and Affordable meal that can be enjoyed for breakfast, lunch, or dinner.
Molletes is a dish you can put together in just a few minutes if you have leftover beans and salsa. My husband at these often growing up in Mexico and it wasn’t until he was adult that he appreciated the simplicity and comfort of molletes.
Ingredients
These are the main ingredients you’ll need to make Mexican molletes. I’ve listed substitutions below you can make.
- Bolillo Rolls– These are a traditional Mexican baguette, and most grocery stores carry them. You can substitute them for any type of sub roll or French baguette.
- Chorizo– Adding chorizo is optional, but it adds more flavor and some protein. You can use soy chorizo or simply omit it.
- Re-fried Beans– I used some leftover refried Black beans, but Pinto or Peruvian are all great options.
- Cheese– Oaxaca cheese is a great Mexican melting cheese. Other substitutes include mozzarella, Monterey jack, or you favorite melting cheese.
- Salsa– I topped the molletes with Salsa Mexicana or pico de gallo. You can also use a spicier option like salsa de arbol.
Another protein option is to top the molletes with a fried egg. This makes a filling and comforting breakfast option.
How to Make Molletes
Start by having all your toppings ready- beans warmed, cheese shredded, chorizo cooked (if using), and the salsa made.
Slice the bolillo roll in half lengthwise, spread with butter on both sides, and toast the bread lightly. Now spread a layer of refried beans and shredded cheese.
Place the bread under a broiler or oven until cheese is melted. If you are using chorizo then add it to the layer of beans and top with shredded cheese.
How to Serve and Store
My kids prefer to eat molletes with just the beans and melted cheese. I love the freshness the salsa Mexicana adds to the warm bread and beans. Add the salsa on top of the melted cheese just before serving.
For any leftovers, it’s best to store the ingredients separately. If the molletes are assembled then wrap each one with plastic wrap or foil, preferably without the salsa. Reheat by placing them in an oven at 350°F for 7 minutes or until the bread is toasted and the cheese is warm.

Ingredients
- 2 Bolillo Rolls sliced in half lengthwise
- 2 tablespoon Butter softened
- 1 cup Refried Beans warm
- 1 cup Mexican Chorizo cooked
- 1 cup Shredded Cheese Oaxaca or Mozzarella
- 1 cup Salsa Mexicana
Instructions
- Preheat your oven to 350°F
- Slice the bolillo rolls in half lengthwise and spread butter on both sides. Place in the oven until butter is melted and the bread is lightly toasted, about 4 minutes.
- Remove the bread from the oven, and add a layer of refried beans, chorizo, and shredded cheese. Place them back into the oven or broiler until the cheese is melted.
- Top with Salsa Mexicana and enjoy.
