I see pictures on social media of people saying they just started a ‘diet’ and their lunch is a few pieces of lettuce and plain flavorless chicken breast. Your salad doesn’t have to be sad! I know I couldn’t live eating that kind of food. Take an extra 15 minutes and prep fresh toppings and chicken that will be so flavorful your tastebuds will have a party in your mouth!
I love making big salads that pack in flavor and nutrients. There’s nothing worse than eating a salad and feeling hungry 30 minutes later.
The recipe for the Cilantro Lime Chicken can be found Here. I’ve made this a salad before with Cilantro Lime Chicken, but what put it over the top is the homemade Creamy Cilantro Lime Dressing. The dressing was so good, we even used it on our tacos for leftovers the second night. Best of all its made with Greek Yogurt, so good protein, and fat. Making homemade dressing isn’t complicated, and the best part is that you control the sodium and adjust to your preference.
*Since this published I don’t eat as much dairy, and a substitution would be using a dairy-free yogurt or a cilantro lime vinaigrette.
Even my kids loved the chicken and the dressing, they used it as a dip with diced avocado, cucumbers, and tomato as their salad. If you have picky eaters, this is a great way to introduce more veggies into their diet by having them bite-sized and ready for dipping. Makes it fun for the kids to eat.
I know this salad will be on rotation over the summer, especially with fresh corn being in season. If you want to meal prep this for a couple of days, then store all your toppings separately and assemble in the morning or pack into mason jars for the week. Store the dressing sepearte in a little container. I don’t have much luck with storing avocado, but you could always bring one in your lunch bag and cut it up before lunch.

Grilled Cilantro Lime Chicken Salad with Creamy Cilantro Dressing
- 1/2 Cup Plain Greek Yogurt or sub dairy free almond milk yogurt
- 1 Garlic clove minced
- 1 Lime squeezed and zested
- 1/2 Cup loosely packed Cilantro stems included
- 1/2 tsp Salt
- Romaine Lettuce chopped
- Cherry Tomatoes halved
- Black Beans canned, drained and rinsed
- Grilled Corn sliced off the cob
- Avocado diced

- For Dressing, place all ingredients in a blender or food processor and blend until creamy. If the dressing is too thick, you can add water to thin it out.
- Assemble salad, add sliced chicken, and top with dressing.
