Queso Fundido con Chorizo

Queso Fundido con Chorizo is melted cheese topped with chorizo. It’s a simple appetizer that can be served as a dip with chips or spoon it onto a fresh Flour Tortilla.

Queso Fundido translates to ‘melted cheese’, and that’s exactly what this Mexican appetizer consists of. Unlike a Queso dip that is creamy and more fluid, queso fundido is thicker and will harden as it cools. Bake the dip right before you plan on serving it.

You’ll find Queso fundido in Mexico served as an appetizer with warm tortillas or alongside Carne Asada Tacos. It comes to your table in a hot skillet with the cheese still bubbly, it’s so good!

Ingredients

You only need 2 ingredients to make queso fundido con chorizo, Cheese and Chorizo.

For the cheese, choose a good melting cheese like Oaxaca, Asadero, Monterrey Jack, or Mozzarella are all good options.

Choose any type of Mexican chorizo you prefer. It can be pork, beef, or soy chorizo. Make sure it is not Spanish chorizo, which is firm and not crumbly.

How to Make

Begin by cooking the chorizo in a skillet over medium heat. Using a cast iron skillet or oven-safe skillet will allow you to make and serve the queso fundido out of the same skillet.

Cooked chorzio will have some crispy brown edges. If you plan on baking the fundido in the same skillet, remove half of the chorizo to save for garnish. Otherwise add half of the chorizo to the baking dish you are using and top with all the shredded cheese.

Place the skillet or ramekin in a pre heated 350°F oven and bake it for 10 minutes or until the cheese is completly melted and bubbly. You do not want to overbake the cheese because it will taste rubbery.

Remove the melted cheese from the oven and add the remaining chorizo on top. Serve the queso fundido immediately. Remind your guests or family that the dish or skillet will be very hot.

Keep in mind that as the cheese cools, it will harden. If by chance you have any leftovers, reheat the cheese again in the oven until it is melted.

Ingredients
  

  • 10 ounce Oaxaca Cheese or a similar white melting cheese
  • 8 ounce Mexican Chorizo
  • Tortilla Chips or Tortillas for Serving

Instructions
 

  • Preheat oven to 350°F
  • Cook the chorizo in a oven-safe skillet. Once done, remove half of the chorizo and set aside.
  • Add shredded Oaxaca cheese to the skillet and bake in the oven for 10 minutes or until the cheese is melted and bubbly. Try not to overbake the cheese.
  • Remove from the oven, top with the remaining chorizo and serve immediately with tortilla chips or warm tortillas.

Notes

When serving the queso fundido, remind your guests that the skillet will be very hot.
Once the cheese cools it will harden. This dish needs to be served immediately after baking it.
