Ground Turkey Coleslaw Stir Fry
Ground turkey coleslaw stir fry is an easy one-pan meal ready in 20 minutes. It’s the egg roll filling in a bowl and topped with spicy mayo. Garnish with some fried wontons for a crunchy bite.

You get all the flavors of an egg roll without the hassle of rolling and frying them. This is one of my family’s favorite weeknight meals when I don’t have a lot of time to cook.

Ingredients and Substitutions
The ingredients for this egg roll in a bowl are pretty simple, and you can find everything at a local grocery store.
- Soy Sauce– Adds saltiness and umami. You can substitute with Tamari or Liquid Aminos.
- Hoisin- Provides a deeper sweet and salty taste. You can substitute with Coconut Aminos or use brown sugar mixed with additional soy sauce.
- Rice Vinegar– While rice vinegar pairs well with Asian flavors, you can use any type of vinegar, apple cider or white vinegar, or squeeze some fresh lime or lemon at the end.
- Sesame oil– I love the nuttiness of sesame oil, but you can substitute it with any neutral oil.
- Ground Turkey– Any ground meat would work in this dish. If you want it meatless, try tofu or edamame as a protein substitute.
- Green Onions– Use both the white and green parts of the onion for more flavor.
- Coleslaw- You can substitute packaged broccoli slaw or shredded napa cabbage.
- Buffalo Mayo– Don’t skip this sauce; it adds a punch of flavor and creaminess. You can substitute sriracha or any hot sauce of your choice. For the mayo, you can substitute sour cream or plain yogurt.
How to Make
This dish comes together in just 20 minutes. The only chopping required is the green onions, which can be sliced with kitchen shears.
Heat the sesame oil in a skillet and add the ground turkey. Season it lightly with salt and pepper. I also added ground white pepper. Then add the white green onion parts, stir fry sauce, and the entire bag of coleslaw mix. It will look like a lot, but trust me, it will wilt significantly in a couple of minutes. Place the lid on the skillet and leave it alone for a couple of minutes.
Open the lid and combine everything. If the cabbage is still hard, continue cooking until softened. Taste for seasoning and add more soy sauce if needed.
How to Serve and Store
You can serve the stir fry as is for a low-carb meal, or with rice, quinoa, noodles, or in lettuce leaves for wraps. Combine the buffalo sauce and mayonnaise and drizzle that on top. Garnish with some green onions. I also cut up some wonton strips and fried them to add a crunchy topping.
This recipe is a great meal prep option. Store it in individual containers in the refrigerator for up to 5 days, and reheat for a quick meal.

- 1 tablespoon Sesame Oil (or any cooking oil)
- 1 pound Ground Turkey (substitute any ground meat)
- 16 ounces Coleslaw Mix (or broccoli slaw or shredded napa cabbage)
- Salt and pepper to taste (black or white pepper)
- 3 stalks Green Onion Use both white and green parts
Stir Fry Sauce
- 2 tablespoon Low sodium soy sauce (or liquid aminos, coconut aminos, or tamari. Taste dish when done and add more if needed.)
- 1 tablespoon Hoisin Sauce (or more soy sauce + brown sugar)
- 1 tablespoon Rice Vinegar (or white vinegar, apple cider, or fresh lime/lemon juice at the end.)
Buffalo Mayo Drizzle
- 2 tablespoon Buffalo Sauce (or any hot sauce)
- 2 tablespoon Mayonaise (or sour cream or greek yogurt)
Optional: Fried Wonton or Egg Roll Wrappers, Steamed Rice, or Noodles.
Instructions
- In a pan over medium heat, add sesame oil and ground turkey. Break apart and cook thoroughly. Season with some salt and pepper, and add the white parts of the green onion.
- Combine soy sauce, hoisin, and rice vinegar together, then add to the turkey. Now add the coleslaw, place a lid on the pan and allow it to cook for a couple of minutes. Remove the lid and combine, most of the coleslaw should be wilted down. Taste and see if additional seasoning is needed.
- Combine buffalo sauce with mayo for the topping. You can eat this as a low carb option, or serve it with rice or noodles. You can also fry wonton or egg roll wrappers if you want those as a garnish. Garnish with the green parts of the onion.

Made this tonight – was delicious!! Added a pack of ramen noodles just to bulk it up a little (I know it takes the healthy out of it!) and then topped with some crunchy wonton noodle strips. Will definitely make again!

Delicious! I loosely followed the recipe. So good! I added Trader Joe’s Kung Pao Brussels sprouts and used coconut aminos and acv and sirracha sauce. I also used the dressing that came with the TJ’s broccoli slaw dressing. So great! I only used half a bag of slaw. Next time I will use a larger pan and the entire bag. Yummy and easy!
