A refreshing mojito with prickly pear syrup for a pretty bright pink cocktail.

Prickly pear syrup puts a bright pink twist on a classic mojito. This drink is perfect for bridal showers, girls night, or sipping drinks by the pool.

What is Prickly Pear?

Prickly Pear is a fruit that grows on top of the cactus paddle. The flesh is a bright pink color and has similar notes to a strawberry.

While the fruit itself can be intimidating to peel, luckily there’s an easier way to enjoy it in a cocktail form. I’m using the Prickly Pear Sour mixer from Iconic Cocktail.

How to Make a Prickly Pear Mojito

Start by muddling some fresh mint in a glass to release its aroma. Using fresh herbs adds a nice floral note to cocktails.

Here are the measurements for a Prickly Pear Mojito:

When choosing a cocktail mixer, I look for one without artificial coloring or flavors. You want the real deal!

After adding all the cocktail ingredients to a glass, give it a stir, fill the glass with ice, and top with sparkling water.

Frequently Asked Questions

Can this be made with a different spirit?

Yes! Technically, it won’t be a mojito without rum, but I’ve tried this cocktail with both vodka and tequila. Any of these spirit variations will work!

Can this be made in a batch version?

Yes! Use the sliding scale in the recipe card to determine the amounts needed based on your servings.
Mix everything except for the ice and sparkling water in a pitcher. To serve fill glasses with ice, and pour the mixed cocktail till it reaches half of the glass. Top each glass with sparkling water.

This drink makes a pretty mocktail as well, just omit the alcohol.

  • Place mint in a cocktail glass. Use a spoon or muddler to muddle the mint and release it's aroma.
  • Add Rum, Lime Juice, Simple Syrup, and Prickly Pear Syrup to the glass. Give it a stir, fill the glass with ice, and top with sparkling water.
