Weekly Meal Plan #2
This week we’re focusing on a variety of easy meals and a ‘Fun Friday’ meal to get everyone excited for the weekend. I try to include a variety of proteins to keep things interesting, but of course, you can always customize to your preference.

If you like to prep some items ahead of time, here’s what you can do:
- Wash & Chop: Prep all your garlic, onions, and cilantro. Dice and chop the vegetables for the tofu stir fry.
- Quick Pickle: Make the cucumber and carrot ribbons for the burgers; they’ll be perfectly tangy by Tuesday.
- Shred Chicken: Cook and shred your salsa chicken for the flautas so it’s ready to grab and roll. Make extra for quick lunches during the week as a protein option. Alternatively, you can buy a rotisserie chicken the day of and shred it.

Monday: Veracruz Style Fish

Pescado a la Veracruzana is a Veracruz-style fish in a flavorful tomato-based sauce.
Since you already chopped the onions, garlic, and chilies, this sauce comes together in minutes. Serve the dish with pre-cooked rice or make this Arroz Primavera.
*Tip- Purchase fresh fish the day before or the day you plan on cooking it. For frozen fish, defrost it in the refrigerator overnight.
Tuesday: Thai Spicy Burger

This spicy Thai-inspired burger has a juicy burger patty mixed with cilantro and Thai chilies. It’s then topped with sweet chili mayo, plus pickled cucumber and carrots for that perfect tangy crunch. It’s got just the right balance of heat and sweetness, a total flavor bomb.
*Tip- Pull your pre-made pickled veggies and Sweet Chili Mayo from the fridge. You can even add the aromatics to the ground beef the morning of and store it in the refrigerator.
Wednesday: Teriyaki Tofu Stir Fry

Teriyaki Tofu Stir Fry is the perfect combination of protein, veggies, and a delicious sauce for an easy plant-based meal that’s ready in just 30 minutes. Serve it with Jasmine rice for a complete meal.
*Tip- Your veggies are already sliced! Just press the tofu, toss, and sear. Not a fan of tofu? Sub your favorite protein and cook it completely before adding the veggies.
Thursday: Baked Chicken Flautas

Baked Salsa Chicken Flautas are crispy, oven-baked tortillas filled with a flavorful mix of salsa chicken and melted cheese. Serve these with your favorite salsa, guacamole, or any dipping sauce you love!
*Tip- Use a rotisserie chicken to save time, or make the salsa chicken a day in advance.
I’ve since tested this recipe in an air fyer and they turn out just as good!
Friday: Carne Asada Waffle Fries

These Carne Asada Waffle Fries are loaded with crispy waffle fries, tender grilled steak, and a creamy homemade queso blanco. It’s the ultimate easy game-day watching or weeknight comfort food that everyone will dig into.
*Tip- Marinate the steak overnight for extra flavor and tenderness.
