Arroz Primavera- Mexican White Rice

Arroz Primavera is a Mexican white rice with mixed vegetables cooked in a savory broth.

This rice makes the perfect side dish for seafood or grilled meat. Unlike Arroz Rojo, there is no tomato in this rice.

Arroz Primavera is a simple recipe, but I have a few tips what will help you make this rice perfect every time.

Ingredients

These are the main ingredients:

White Rice, Mixed Vegetables, Onion, Garlic, Chicken Broth, and Butter.

White Rice– You can use a Long Grain, Basmati, or Jasmine Rice. The rice needs to be rinsed well then drained until most of the liquid is gone.

Mixed Vegetables– Use fresh, frozen, or canned mixed vegetables. I prefer to use frozen since I can store the remaining vegetables in the freezer.

The Broth– I’m using water and chicken bouillon with onion and garlic. You can also substitute a chicken broth. If you need this to be vegetarian, use a vegetable broth.

How to Make Arroz Primavera

Rinse the rice and drain it while you continue prepping. In a blender or food chopper, add the onion, garlic, and chicken bouillon with a little bit of water.

Blend until a smooth sauce forms. If you are using a broth instead of bouillon, use that instead of the water.

Melt butter in a nonstick skillet or pot with a lid. Add oil and drained rice to the skillet.

Coat rice in the oil and butter, but do not brown it. Add in the blended sauce and remaining cups of water.

The ratio is 1.5 cups of rice to 3 cups of water. I measure 3 cups of water first and use that in the blended sauce to avoid adding excess water.

Add the mixed vegetables on top of the broth. You can add them straight from frozen.

Place the lid on the skillet or pot, bring to a boil, then reduce heat to a simmer. The lid should have a venting hole for steam to release.

Cook rice for 15 minutes, then turn off the heat and leave the lid on for an additional 10 minutes.

After 10 minutes, remove the lid and fluff the rice with a fork. The vegetables will spread out to the sides, simply fluff the rice to incorporate them into the rice.

The rice should be fluffy and perfectly cooked. Taste for seasoning and add extra salt if needed.

How to Serve and Store

Arroz Primavera is best served warm after cooking it. This rice pairs perfectly with seafood or grilled meat.

Leftovers can be stored in the refrigerator up to 5 days. Reheat rice in the microwave or in a nonstick skillet until warm.

  • Rinse the rice with cool water in a strainer and drain it well before you begin cooking.
  • Portion out 3 cups of water or broth (chicken or vegetable broth).
  • In a blender or food chopper, add the onion, garlic, and chicken bouillon with a little bit of water you portioned out. (If using broth, omit the bouillon and add some broth to the onion and garlic). Blend until a smooth sauce forms.
  • Melt butter in a nonstick skillet or pot with a lid. Add oil and drained rice to the skillet.

Notes

Once the rice mixture comes to a boil, reduce the heat to low so that it is just simmering. If you don’t have a glass lid, peak the lid open after 5 minutes of adding the vegetables.
