Brunch Toast- 3 Ways
Three elegant yet easy toast recipes that are perfect for brunch. Avocado toast, Smoked Salmon toast, and Peanut Butter with Apple toast.
I love a good elevated toast for brunch or breakfast. Here are 3 of my favorite ways to take plain toast to the next level. They’re ‘Extra’ but not complicated to make.
The secret is seasoning each layer for that perfect bite each time. Check out the YouTube Video at the end to see how I make each one.
Avocado Toast with a Fried Egg
Starting with my favorite way to do a brunch toast, and that is an Avocado Toast.
So how do you take it to the next level?
For all 3 toasts, I’m using toasted sliced sourdough bread as my base.
Start by layering thinly sliced avocado across the toast and season with bagel seasoning. If you don’t like the bagel seasoning then season the avocado slices with salt and pepper.
Then layer some arugula over the avocado and drizzle with a good quality olive oil and sprinkle of salt. I also sprinkled red pepper flakes over the arugula for heat.
Do you see what I mean about seasoning each layer?
Top the arugula with a fried egg, or however you prefer your egg. And season the egg with salt and pepper. Then garnish with some beautiful rainbow micro greens for a finishing touch.
Smoked Salmon Toast
The second brunch toast is another classic, Smoked Salmon and Cream cheese.
Spread a layer of cream cheese or dairy free cream cheese on your toast. Layer with your favorite smoked salmon. The one I used here is seasoned with dill.
Smoked salmon needs acidity, so either squeeze some lemon on top or I used capers.
Then layer a hard boiled egg and season the egg with salt and pepper. I love the bright yellow yolks from farm fresh eggs. A soft boiled egg is delicious too!
Garnish the Salmon toast with more of the rainbow micro greens for a pop of color. You can also do thinly sliced purple onions for more flavor and color.
Peanut Butter Toast with Apples
The third brunch toast is more on the sweet side and layered with peanut butter, another weakness of mine.
Feel free to use your favorite nut butter, or sunflower butter if you need it to be nut free.
Spread a layer of peanut butter on the toast and add thinly sliced green apples. I prefer the tartness of the Granny Smith apples.
Then sprinkle cinnamon and drizzle honey on top. If you’ve never tried apples with cinnamon and honey, you’re in for a treat! The flavors pair so well together.
You can also change up the peanut butter for a whipped ricotta as the base and layer the apples, cinnamon, and honey. So Good!!
Play around with the flavor combinations and come up with your own creations.

Avocado Toast
- 1 slice Toasted Bread I used Sliced Sourdough
- 1 Avocado Thinly Sliced
- 1 Egg Fried or cooked to your preference
- Rainbow Micro Greens For Garnishing
- Seasonings: Salt, Pepper, Red Pepper Flakes, Bagel Seasoning, and High Quality Olive Oil
Smoked Salmon Toast
- 1 slice Toasted Bread I used Sliced Sourdough
- 1 Tbsp Cream Cheese or Dairy Free Cream Cheese
- Smoked Salmon Slices
- 1 Egg Hard Boiled or cooked to your preference
- Rainbow Micro Greens For Garnishing
- Seasonings: Salt, Pepper, Capers or Lemon Juice.
Peanut Butter Toast
- 1 slice Toasted Bread I used Sliced Sourdough
- 1 Tbsp Peanut Butter or your favorite nut butter
- 1 Granny Smith Apple Thin slices
- Cinnamon and Honey
Instructions
Avocado Toast
