Ingredient Notes

You only need a few simple ingredients to make perfectly crispy grilled wings.

Raw chicken wings on a plate with avocado oil and salt and pepper in bowls.
  • Chicken wings: Use fresh or fully thawed wings for even cooking.
  • Avocado oil: Helps the seasoning stick and encourages crispy skin. Any neutral oil works well.
  • Salt and pepper: A simple seasoning that lets the smoky grilled flavor shine.
  • Wing sauce (optional): Toss the cooked wings in your favorite buffalo sauce, barbecue sauce, or dry seasoning after grilling.

Tips and Notes

  • Use a thermometer. Chicken wings are done when they reach an internal temperature of 165°F.is method of grilling results in a crispy exterior, without being burned, and still juicy on the inside.
  • Cook over indirect heat. This allows the wings to cook through without burning the skin.
  • Keep the grill between 350°F and 375°F. A steady temperature helps the wings crisp evenly.
  • Leave the lid closed. Opening the grill too often releases heat and can increase the cooking time.
  • Rotate the wings if needed. Move them around if your grill has hotter spots.

How to Make Crispy Grilled Chicken Wings

The grill we are using is a ceramic grill with a heat-deflecting stone on the bottom grates. When the grill is heated to 350°F, place the chicken wings directly on the grill grates in a single layer.

  • 1 tablespoon Avocado Oil
  • Salt and Pepper to taste
  • 1 pound Chicken Wings

Instructions

  • Ceramic Grill– Place a heat deflector and heat the grill to 350-375°F
Pellet Grill– Heat grill to 375°F
Gas Grill– Turn on one side and heat to 375°F
  • Place chicken wings in a bowl or plate, add avocado oil, and season lightly with salt and pepper. If using a dry rub, replace the salt and pepper and add it now. Mix to coat each chicken wing.
  • Place the wings directly onto the grill grate in a single layer. If using a gas grill add the wings to the side without the flame on.
  • Allow wings to cook for 30 minutes. Flip each wing over and rearrange any wings if needed. For example, the outside of our ceramic grill gets hotter than the center.
  • After flipping the wings over, allow them to cook for an additional 20-30 minutes. Total cook time is 50-60 minutes or until they are golden on all sides.
Remove wings from the grill and serve or toss in your favorite sauce.
