This week’s meal plan includes some of my family’s favorite recipes and easy meals to fuel us through the week. Don’t forget to download the shopping list and check out my prep tips for each meal.

Monday: Red Curry Cod

This easy Thai Red Curry Cod is made with just 3 Ingredients and is ready in 20 minutes. Use a high-quality curry paste for an authentic taste and serve it with rice or noodles.

*Tip- Fresh cod is best cooked early in the week for the best texture and flavor. The curry sauce comes together quickly, making this a great way to start the week.

Tuesday: Cheesy Taco Pasta

Pasta shells mixed with ground beef, enchilada sauce, and shredded Mexican cheese for an easy and kid-friendly pasta dish.

*Tip- Brown the meat while the pasta shells are cooking. Use your favorite pre-made enchilada sauce to save more time.

Wednesday: Thai Wonton Soup

Mid-week calls for something cozy but not heavy. This Easy Thai Wonton Soup is made with homemade wontons and vegetables for a hearty and comforting soup.

*Tip- You can make wontons ahead of time, place them on a tray to freeze, then store them in a zip top bag and cook from frozen.

Thursday: Chicken Milanesa

Milanesa de Pollo is a Mexican version of fried chicken cutlets. This recipe uses blended crackers as the coating, resulting in a flavorful and crispy chicken. Serve with a simple side salad or this Mexican Spaghetti Blanco.

*Tip- Slice, pound, and season the chicken ahead of time, so all you need to do is bread and fry.

Friday: Quesabirria Tacos

Beef Birria cooked in the Instant Pot in less than half the time for juicy, tender meat. Use the Birria to make the popular QuesaBirria Tacos, which combines a Birria taco and a Quesadilla.

The Instant Pot does all the heavy lifting.
Start it earlier in the day and let it stay warm, so it’s ready whenever you are ready to make the tacos.

Here’s a bonus: Dessert- Tres Leches Cake. It’s a simple box cake mix that gets transformed with a sweet, creamy tres leches mixture. My family is obsessed with it!
