Paletas de Coco
Paletas de Coco, or Coconut popsicles, are so creamy and loaded with coconut flavor. This dairy-free recipe is a delicious, sweet, and refreshing treat.

A variation of a Mexican popsicle, Paletas de Coco tastes similar to Thai coconut ice cream, but without the churning. Shredded coconut adds texture and intensifies the coconut flavor for a satisfying treat.
Similar to my Paletas de Fresas, they are extra creamy, but the coconut milk makes them dairy-free.
Ingredients Needed
You’ll need just four main ingredients and a pinch of salt to make these coconut popsicles.
- Coconut Milk– Use full-fat canned coconut milk for the best taste and creamy texture.
- Shredded Coconut– I used unsweetened shredded coconut, but if you prefer a sweeter taste, you can use sweetened.
- Sweetened Condensed Coconut Milk– This adds sweetness to the paleta, more coconut flavor, and is also dairy-free. You can use regular sweetened condensed milk, but it contains dairy.
- Vanilla Extract – Although not necessary, I like how vanilla extract enhances the coconut flavor.

How to Make
These posicles are easy to make. Add all the ingredients to a blender and blend for a few seconds. Pour the mixture into a silicone popsicle mold, leaving a little room at the top to prevent overflow after freezing.

Place the lid on the mold and insert wooden popsicle sticks. Make sure the popsicle sticks don’t touch the bottom of the mold; otherwise, they will be difficult to remove.

I was able to fill eight posicles with this mixture. Gently tap the mold to release any air bubbles. Place the mold in the freezer for at least 4 hours to let them completely freeze.
To remove the paletas, take the mold out of the freezer and run the mold under warm water for a few seconds. Be careful not to get water on the top.
Use two fingers to widen the mold and remove each popsicle gently. Enjoy them immediately or place them into little baggies to store in the freezer for up to a week.

- 6 ounces Sweetened Condensed Coconut Milk (see note below)
- 1 cup Unsweetened Shredded Coconut
- 1 teaspoon Vanilla Extract or coconut extract
- ¼ teaspoon Salt
Instructions
- Add all the ingredients to a blender and blend for about 10 seconds. Pour the mixture into a silicone popsicle mold, leaving a little room on top.
- Gently tap the mold to release any air bubbles. Place the lid on, and insert the wooden popsicle sticks, making sure they don't touch the bottom so you have enough room to remove them. Freeze for at least 4 hours.
- Once frozen, remove the mold and run the sides and bottom under water for a few seconds.
- Use your fingers to widen the mold and remove each popsicle. Enjoy them immediately or place them into little baggies to store in the freezer for up to a week.
