Add oil, chipotles, honey, garlic, salt, and black pepper to a blender or mini food chopper. I needed to add a splash of water to get things going. Blend until a smooth sauce forms.
Poor marinade over chicken and mix to distribute evenly. Refrigerate for 4 hours or up to overnight.
Cook chicken on a grill over indirect heat for 30 minutes or bake in the oven at 400° F for 30 minutes or until the internal temperature reaches 165° F for either method.
