1TbspTaco Seasoning1 teaspoon Chili Powder, half teaspoon Salt, half teaspoon Black Pepper, half teaspoon Onion Powder, half teaspoon Garlic Powder
8ozRed Enchilada SauceHomemade or Store bought
1CupShredded Mexican Cheese Blend
Optional toppings: Tomatoes, Avocado, Green Onion, Cilantro, Greek Yogurt or Sour Cream
Cook pasta shells according to package direction till al dente.
Brown ground beef in a large skillet or dutch oven. Season beef with Taco Seasoning, and add cubed cream cheese. Combine until cheese is melted. Add Enchilada sauce and combine.
Once pasta shells are cooked, drain, and add into ground beef mixture. I also add about half a ladle of the pasta water to help it thicken. Taste pasta and ground beef for seasoning. Add any additional salt if needed.
Turn off the heat and add shredded Mexican cheese blend. Combine until cheese is melted.
Serve with optional toppings of Tomatoes, Avocado, Green Onion, Cilantro, Greek Yogurt or Sour Cream
