Add Oil to a pan over medium high heat, add garlic, stir for 30 seconds, then add Cauliflower rice. If using frozen, then cook till warmed through, without a lid on.
Turn off heat, add lime zest, juice of lime, and chopped cilantro, Mix well. Add salt to taste.
Notes
The lime I used was pretty big, so ended up just using half. But you can always double the recipe to to have extra on hand for meal prep.
