Add half of the diced onion, jalapeno, and cilantro to the molcajete. Reserve the other half to mix into the guacamole. Unless you prefer to grind it all.
Add a pinch of salt and grind the ingredients against the sides of the molcajete using a circular motion. After a couple of minutes, a paste will start forming. It does not need to be completely smooth.
Now add the flesh of 2 ripe avocados to the molcajete. Use a gently pounding motion to break down the avocado. Use a spoon to coral the ingredients back into the center of the molcajete. Continue mixing until the consistency is where you like it.
Squeeze 1 whole lime, add salt, diced tomatoes, and the remaining onion, cilantro, and jalapeno. Mix everything and taste for seasoning. Add more salt or lime if needed.

If you need to make it ahead of time or for leftovers, place a piece of plastic wrap directly on the guacamole and press out any air. Then place a lid and refrigerate for up to 1 day.
