Add oil to a cast iron or heavy-bottomed pan. Turn heat to medium and allow oil to reach 350° F.
Use kitchen scissors to cut rice paper into smaller pieces. You can do triangles or squares.
Carefully place 1-2 pieces of rice paper into the hot oil. They will immediately puff up and use tongs to remove the fried rice paper and place it on a paper towel-lined plate to drain.
Season the rice paper chips with salt or your favorite seasoning. Continue frying the remaining rice paper pieces.

Notes
Rice paper chips are best eaten right after they have cooled down for a minute. If you need to make them ahead of time, I would suggest no more than an hour of leaving them on the counter. Otherwise, they may start to get stale.
