Start by cooking the diced bacon in a large pot, drain it, then add it back in with whole green onions.

Now add the diced beef and cook till no longer pink. Then add cilantro to the pot or blend it with the tomatillos.

Blend tomatillos in a blender with some water and salt and add it to the pot. Add water and bring to a boil, then simmer for 20 minutes until beef is tender.

Serve Carne en su jugo with beans, extra bacon, cilantro, or chopped white onion.

Leftovers can be stored up to 5 days, then reheat on the stove or microwave.
