Bring a pot of salted water to boil and cook pasta just before al dente, 6-7 min. Since we will be baking it, we don’t want the pasta to be overcooked. Drain the pasta and set aside.
Place cashews in a pot with 1 cup of vegetable stock or chicken stock for non vegan. Bring to a boil and then remove from heat, place lid, and let sit for 15 minutes. Then, place cashews, stock, salt, lemon juice, and nutritional yeast into a high speed blender or food processor and blend until creamy. I blended for about 40 seconds.
Spray a casserole dish with cooking spray and place cooked American Beauty SuperGreens® pasta in the dish. Pour in 1 cup of salsa verde and stir well. Then, pour cashew sauce over the top and spread evenly with a spatula. Bake in a 350 degree oven, uncovered, for 15-20 minutes until warmed through.
