Sweet Potato Empanadas

Sweet Potato Empanadas or Empanadas de Camote, made easy with store bought pie dough and a simple filling.

INGREDIENTS:

Make the filling by boiling and mashing sweet potatoes with butter, brown sugar, and cinnamon.

Cut pie dough using a glass and flatten with a rolling pin. Place 2 spoons of filling, fold over and seal.

Brush with egg wash Bake @350 F for  25 min
