Red Curry with Kale and Sweet Potato

Thai Red Curry with chicken, sweet potato, and kale tastes authentic, but I'm using non-traditional ingredients for a different spin.

The combo of sweet potato and kale gives the curry a good nutritious boost.

Ingredients for Red Curry

Chicken Breast, Red Curry Paste, Sweet Potato, Coconut Milk, Kale leaves and seasonings.

Always taste the curry after you add the coconut milk, and see if additional paste is needed or if you need to add fish sauce or sugar.

You can substitute any type of vegetable or protein for red curry.

Serve with Jasmine Rice, Brown Rice, or cauliflower rice.
