Cilantro Lime Rice gets a healthy makeover by swapping out rice with cauliflower rice
What if I told you you can make cauliflower rice taste just like the rice from Chipotle?? Well, you totally can! And it's only 4 ingredients!
I realize not everyone likes the taste/texture of cauliflower rice, but when you pile on the flavors and serve it with some saucy Mexican Shredded Beef, you won't even realize that you're have a healthy low carb meal. If your trying to eat healthier or just cook more, then citrus and spices are your best friends. Citrus will add vibrancy to almost any dish, and spices will add flavor without sodium. Always keep a stocked spice rack and have lemons/limes on hand at all times.
I love eating rice, whether it's with Mexican food or Thai food. Growing up with a Thai Mom, I was fed a lot of rice! One of my 'chores' as a kid was to make rice in the rice cooker, because every Asian house has a rice cooker! Now I'm more conscious of what I eat, and want to eat foods that give me more nutrition and less calories. Because really I'm just trying to balance out all the dessert I eat 🙂 I personally enjoy swapping out cauliflower for regular rice, but I still enjoy regular rice every now and then.
The recipe I just posted for Mexican Shredded Beef goes perfect with Cilantro Lime Cauliflower rice. I had a leftover avocado from breakfast and decided to add a few slices. You can get as creative as you want with this bowl and add corn, beans, salsa, or cheese. The possibilities are limitless! Save yourself even more time by buying frozen Cauliflower rice and just add the garlic, cilantro, and lime. Boom! You'll have a better for you fast food meal in less time than it takes to drive over there.

Cilantro Lime Cauliflower Rice
Ingredients
- 16 oz Cauliflower Rice Pre packaged or use a cheese grater on the cauliflower
- 1 tablespoon Oil
- 2 Garlic cloves Minced
- 1 Lime Zested and Juiced
- Handful Cilantro Chopped
- Salt to taste
Instructions
- Add Oil to a pan over medium high heat, add garlic, stir for 30 seconds, then add Cauliflower rice. If using frozen, then cook till warmed through, without a lid on.
- Turn off heat, add lime zest, juice of lime, and chopped cilantro, Mix well. Add salt to taste.
