  • Need a Beautiful salad dish? I have one last Thanksgiving Recipe to share- Roasted Acorn Squash Kale Salad. This salad is packed with Fall flavors and looks beautiful on a platter.  I posted in my stories on how I opened my first pomegranate yesterday, and was surprised how easy it was! Dried Cranberries can also be substituted if you don't have pomegranate. โž•
Here's the recipe:
1 Bag of chopped kale (Remember to massage it!)
1 Acorn squash (Halved, sliced, and seasoned with cinnamon, nutmeg, brown sugar, salt.)
Chopped Pecans or Walnuts
Pomegranate Seeds

Dressing;
1/4 cup Trader Joe's Orange Champagne Vinegar
1/4 cup oil (Olive or Avocado)
1 Tablespoon Maple Syrup
Pinch of salt

Instructions:
Cut Acorn squash in half, remove seeds, and slice into 1 in pieces. Season with cinnamon, nutmeg, brown sugar, and salt. Roast in a 400 degree oven for 20-25 minutes until tender. (Skin is edible once cooked, but you can also remove it after cooking.)
Massage Chopped Kale leaves.
Combine ingredients for dressing, mix well, and pour dressing over kale, toss well, and add salt if needed.
Place roasted Acorn squash on top of kale salad and top with toasted pecans and pomegranate seeds.
